What’s the Skinny at the Skinny Pancake?

            At this point, Burlington’s famed waterfront créperie is certainly a classic, and if you haven’t been at this point in your UVM career, it is high time to take advantage of all of this sunshine and get yourself downto the Skinny Pancake.

I was able to make it there last Tuesday, and since I’ve had my fair share of “Lovemakers” and “Heartbreakers”—filled with gooey nutella, or whipped cream, or delicious fresh fruit—I opted for something a little different this time around. As a bit of breakfast fanatic, it’s hard for me to stay away from a plate of biscuits, gravy, and scrambled eggs when I see it on the menu, so I simply couldn’t resist. We also got the “Chop Salad”, to add a healthier aspect to our meal, which has a scrumptious combination of local greens, hard boiled egg, cucumber, shredded carrot, red onion, bacon, Bayley Hazen blue cheese, avocado, tomato, and house-made ranch dressing to fill you up.

As usual, we were by no means disappointed with this meal (even though it didn’t include a single crepe!). If the stunning views of the waterfront, with the quickly melting Lake Champlain in the distance, weren’t enough to make for an extremely well spent afternoon, the fluffy eggs, the homey gravy, and the fresh springy salad definitely did it for me!

Although The Skinny is always a fun breakfast and lunch spot, it also comes alive at night, when they turn their space into a music venue for many local and travelling musicians.  If you check out the Skinny’s online calendar or the BORED calendar too, you are very likely to find different kinds of events going on, which are the perfect opportunity to either hear some fabulous new music, contribute to a good cause, or just enjoy some yummy food. Their newly renovated space is wide-open for dancing and hanging out, but is cozy enough that it is still intimate and casual. In fact, The Skinny is available to be rented out for graduation parties, and also offers a catering service, so if you’re a graduating senior looking for a quintessentially Vermont-y restaurant to invite your family and friends to this May, look no further than our very own Skinny Pancake. Likewise, if it’s simple, local, and tasty food that you need, their catering service can do the trick.
